Our Fennel has a strong aniseed flavour and healthy green looking, feathery leaves. Normally, these leaves arise on top of a fennel bulb vegetable and are thrown away with the outside parts. However, these leaves have a beautiful fine, fennel taste that can excellently be used for cooking. That\u2019s why we decided to produce Fennel as a microgreen in our vertical farm.<\/p>\n
Next to our green Fennel, we also have a\u00a0Bronze Fennel. The taste is quite similar, however the colour is different. Restaurants like to use our Fennel mostly as garnishment \u2013 to top of their beautiful dishes.<\/p>\n
Fennel can be used in a variety of ways.\u00a0\u00a0You can mix the fennel microgreen into pestos, salsas, stocks, curries, and vinaigrettes for an added hit of freshness. You can also use them to top off yogurt dips, eggs, stir-fries, toasts, and seared meats. And they\u2019re delicious when tossed into green salads or strewn on top of roasted vegetables.
